Recipe: 1: Coriander mixed vegetable rice
I love making mixed vegetable rice. Not only are they very easy to make but are also very tasty and filling. Plus we get the added benefit of eating different veggies at one go. This time I tried to give a twist to my usual recipe. I tried making mixed vegetable rice with coriander flavor by adding lot of fresh coriander to it.
Ingredient:
Rice 1 cup
mixed vegetables 1cup
coriander 1 and half cup
For Tempering add cumin seeds and for masala add bay leaves. Green Chilies and Salt to taste. Cut 1Coriander leaves and saute them to remove the raw taste. Then heat oil in a pan and add cumin seeds, bay leaves, green chili and let it splutter. The add the mixed vegetables and rice and saute for 2-3 mins.. Then add the sauted coriander and salt to it and pressure cook. After the rice is cooked, add the rest of the coriander and mix. Serve with raita or kurma for a yummy lunch/dinner

Recipe: 2: Baked chocolate Biscuit/kuzhukattai
Simple Change in the kuzhukattai recipe. And simple loved it too. I came upon this recipe change when I had excess dough in my hand after making apple pie. So I used it to make chocolate kuzhukattai.
Recipe:
All purpose flour - 1/2 cup
Butter - 3-4 ts
Salt - a pinch
Oil - 3-4 ts
Stuffing - milk chocolate chunks
Combine all purpose flour, butter, salt, oil and water and whisk and make it into nice soft ball of dough (like pizza base consistency). Take a small part of the dough and roll it out in to a square shape. Place one or two chunks of chocolate inside and fold, so that the chocolate is completely covered.
Pre-heat the oven to 350'F. Now place the rolled up balls of chocolate and bake it for about 20 mins in 350'F. When the crust is completely baked remove it from the oven and serve hot. Really yummy chocolate biscuit/kuzhukattai is ready.
