Eggless Baking

Chocolate Coffee Cake

Baking has become my new passion. After successfully making carrot cake & chocolate chip cookies, my eyes landed on the box of 10 months old homemade chocolates box sitting on top of my fridge. Time to experiment more..!!

Well, the first hurdle was to break the chocolate !! After 10 minutes struggle, I had some decent sized chips of chocolate out of the block, but they were not small enough to be made in to cake. Got a brainwave (not that it was much of brain'er.. still !) , mix it with milk, and heat in microwave.. for a looong time...!! ta-da..!! at the end of 15 mins, I had a nice sized hot gooey chocolate syrup... add some All purpose flour (maida flour),  instant Folgers coffee powder and some cappuccino powder with just a pinch of baking soda, fruit salt and two spoons of sugar, viola! the chocolate coffee cake dough is ready. Just pushed it in to the oven for 15-20 mins (or until the toothpick comes out clean)....it was done..!!

 My hubby loved it!! :)

PS: Add a little bit of butter in the mixture to make the cake soft.

Chocolate chip cookies

This Valentine's Day, I wanted to make something special for my Hubby. But unfortunately, the gift that I had ordered was late. So I decided to make something at home to surprise him. Being not that a great cook, I was scared of trying anything new on Valentine's day for fear of spoiling a good night. Still, having no other go, I decided to give this recipe for chocolate chip cookie a try. Thus started this experiment.

Well, for one cup of all purpose flour (maida flour), I added half a cup of sugar. To this I added some good quantity of butter, a pinch of baking soda and fruit salt, just a hint of vanilla essence and just a spoon or so of curd. Finally made it in to a nice soft ball like dough for pizza base after loads of kneading. Inserted the chocolate chips and some m&m's in the heart shaped dough.

After baking it in the oven for about 20-25 mins, nice yummy cookies are ready to serve. Well throw in some nice chocolate dipped strawberries and a small home baked cake, the Valentine's day surprise is almost done!!  :)
